products by detecting typical gases emitted by the products. The
testing may take place at various stages until the product
delivery to the consumer. The detection technology is based on
the measurement process known as Ion Mobility Spectrometry (IMS).
The equipment is highly sensitive to molecules discharged from
food products, even at very low rates, as compared to other
technologies. The device is intended to be lightweight, small,
and portable.
The proposed device will allow rapid testing of many samples, by
a variety of users - buyers as well as suppliers in the meat and
fresh fish industries. Its purpose is to identify the degree of
freshness of the tested food and to warn of any suspect items.
The method permits the detection of very low concentrations of
molecules (ppm to ppb range). It is particularly suitable for
compounds that have proton affinity (PA), prominent among which
are amines discharged when meat and fish spoil. The combination
of high specificity with the low cost of the portable device
should offer clear advantages over existing systems.
